The south-facing Premier Cru Servoisine vineyard is actually a continuation of the famous Clos du Cellier aux Moines vineyard, just lying further down on the slope. Here, the wine’s profile shows red fruit character, but with more firmness and structure. Gorgeous aromatics predict greatness and the first sip – and subsequent ones – do not disappoint. Hélène Sarkis, the managing director at Domaine Joblot, describes it accurately, I think, as an “iron lady.” The care that Joblot takes in the vineyard and the cellar gives this wine (and all of theirs, frankly) an unmistakable presence and elegance. This firm Servoisine, imbued with fine tannins, deserves a place in a Burgundy-lovers cellar where it should rest for a decade or so.
