Domaine du Cellier aux Moines, which owns 5-ha of prime vineyards in Givry and has their state-of-the-art gravity flow winery there, specializes in red wines from that appellation even though Givry can produce whites. For white wines, they have purchased small plots in appellations in the Côte de Beaune, and have long-term farming contracts in Montagny, the source for this wine. With Côte d’Or prices where they are, Burgundy lovers must look outside of that cherished area, to places like Montagny, for more affordable offerings. Indeed, a good rule of thumb is to look for wines from top producers, like Domaine du Cellier aux Moines, from less prestigious appellations to find value in Burgundy. This stunning wine combines ripeness—no doubt from its south-facing slope—and energy from its almost 1,000-ffoot elevation. The combination results in a understated, yet luxurious, creaminess atop the stoney base for which Montagny is known, all enhanced by vibrant and uplifting acidity. Subtle tropical fruit aromas are enticing but not overwhelming or dominant. Drink over the next several years with lobster or grilled swordfish.
