Do not miss this bargain-priced and energetic still white wine from Raventós i Blanc, one of Spain’s top sparkling wine producers. Raventós i Blanc resurrected the Can Sumoi estate, which is located at about 2,000 feet of elevation above sea level, perhaps the highest point in the Penedès, and replanted it organically using biodynamic practices. This wine, made entirely from Xarel-Lo, one of the traditional grapes used for sparkling wines, is, simply put, a delight. Firm, yet not hard or angular, it delivers more mineral-like flavors than fruity ones and finishes with the barest hint of seductive bitterness and uplifting saline acidity. This balanced beauty would be ideal for the plethora of flavors found on a tapas table.
