Samuel Billaud’s Les Vaillons, from old vines, comes from the heart of Les Vaillons, not one of the adjacent vineyards that are allowed to use the name Vaillons. Typical of Vaillons, it displays a lovely floral aspect that contrasts with, and enhances, its minerality. Fermented and aged entirely in stainless steel, its lacey character shines. A hint of bitterness and great acidity in the finish enhances its appeal. You could easily drink this now with seafood or shellfish, though I suspect it will take on more weight and character with a few more years of bottle age, so there is no rush.
