Far too many consumers believe that Prosecco is Italy’s sole sparkling wine. Well, it’s not. In the province of Trentino, in the foothills of the Alps, producers have long been making delicious sparkling wines, like this one, from Chardonnay and Pinot Noir (the grapes used for Champagne, and by the metodo classico, the classic – or Champagne method). These well-priced bubblies never get the credit – or attention – they deserve. A blend of Pinot Noir and Chardonnay, Rotari’s rosé delivers engaging, strawberry-like flavor supported by a welcome spine of acidity. Certainly, a fine aperitivo, it would also go nicely with grilled salmon this summer.
