Givry, a village in the Côte Chalonnaise is an under-the-radar Burgundy appellation for high quality and affordable Burgundy, especially its Pinot Noir-based red wines. The Premier Cru vineyards lie in an east- and south-facing amphitheater at roughly 200 to 300 meters above cellar, similar to the exposure of its northernly and most expensive neighbor, the Côte d’Or. Simple stated, Joblot, whose entire production is organically farmed, is one of Givry’s top producers. Les Bois Chevaux vineyard lies in the east-facing part of the amphitheater and has light limestone/clay well-drained soil that undoubtedly contributes to this wine’s exceptional elegance and finesse, qualities that balance and enhance its red cherry like fruitiness. Lacy fine tannins add firmness without intruding. Decant it now or give it a few years in the cellar.
