Piaff, Champagne (France) Brut NV ($70 Foley Family Wines)

This is a new Champagne house, founded barely a decade ago. That said, they have quickly learned how to make fine Champagne. This delectable Brut, a blend of roughly equal parts Pinot Noir, Chardonnay and Pinot Meunier grown in the Vallée de la Marne, has an ideal combination of graceful power and spine. A delight as an aperitif, it has sufficient “oomph” to hold up to sautéed fish or even lobster bisque.
