Domaine Samuel Billaud, a top grower in Chablis, consistently makes terrific wines at all levels, AOC Village, Premier Cru, and Grand Cru. This excellent AOC Village Chablis is a blend from three plots, two on the left bank of the Serein River and one on the right bank, so it offers a good representation of the appellation. That it was fermented and aged on its lees in stainless steel tanks for 18 months helps explain its fresh appeal. Showing more minerality and flintiness than many Chablis wines from the warm 2023 vintage, this one is a delight to drink now with shellfish or simply prepared seafood.
