($12, Opici Wines): This lacey, light salmon-colored wine could convince any skeptic of the charms of rosé.  Dry with a hint of wild strawberries, the 2013 Château Beaulieu has an incredibly refreshing mouth-tingling crisp acidity.  With a hint of spice and surprising — for rosé — complexity, it’s a great choice (and a great buy) for the waning days of summer.
