($15, Kobrand Wine & Spirits): Blended from basically equal parts of the traditional grapes used for Cava, Macabeo, Xarel-lo, and Parellada, this sparkler is friendly in character.  Its mid-weight — 11.5 percent alcohol — character and its fruity profile makes it a lovely wine to use as an aperitif on hot and humid summer evenings.  Refreshing and clean, it is made entirely from organic grapes.  A spine of acidity keeps it fresh.
