($42, Palm Bay International): Ferrari is one of, if not the, top producer of sparkling wine in Trentino.   This splendid one, Perlé, is made entirely from Chardonnay grown in a single vineyard.  A firm backbone of acidity supports and balances its suave creaminess.   Extended aging on its lees (the 2007 is the current vintage) adds an alluring complexity.  A bottle of this easy-to-recommend bubbly should be in everyone’s frige for when friends drop by.
