Made from a blend of red grapes — Pinot Noir (60%) and Pinot Meunier — grown in the premier cru village of Hautvillers, this is a powerhouse coupled with uncommon elegance. The combination is captivating. Four to five years aging on the lees (spent yeast) explains a warm toasty feeling this Champagne delivers. One sip makes you stand up and take notice. Yes, it’s fine as an aperitif, but it’s even more enjoyable with a meal. I’d happily drink it with a roast chicken or even a steak.
