Combine six years of aging on the lees with that grape produces this wonderfully powerful Champagne. Despite its muscle, there’s startling finesse and refinement that balances the nutty yeasty flavors. A fine thread of acidity pulls it all together. Sure, you can celebrate with it, but you could also serve it with poached salmon at brunch.
