($20, David Milligan Selections): Ménétou-Salon is a small appellation just to the west of Sancerre that also requires use of Sauvignon Blanc for its white wines, which typically are a little softer and gentler than those of its more famous neighbor. Fournier, one of Sancerre’s top producers, also makes fine Ménétou-Salon. Clean and precise, this one has good mineral-like flavors and verve.
