($53, Polaner): Agrapart & Fils, a small producer who farms about 25 acres of vineyards in the Côtes des Blancs, focuses, not surprisingly given their location, on Chardonnay.  The 7 Crus Brut takes its name from the 7 villages, four of which are Grand Cru, from which the grapes come.  Creamy, elegant and very long, this refined Champagne is a joy to sip and even better to drink.  Great supporting acidity balances without intruding or perturbing the palate.
